Some sweet potatoes aren't edible

Question: The ornamental sweet potato vine I planted has sprouted a huge potato. Is this edible?

I am not sure which ornamental sweet potato you are referring to.

There are several out there, and all of them, I am told, have tubers that are bitter and not edible.

However, if you can store the tuber until next year, you can use it for propagating new plants identical to the ones you had this past year.

The tuber may keep for you in the soil where it is.

Just cover it with 6 to 8 inches of mulch and keep the soil around it dry so that it doesn't rot.

Remove the mulch when all danger of frost has passed.
