SPOTLIGHT ON: Teriyaki Madness

Spend a few minutes with Rod Arreola and he will convince you that the latest food craze to hit the city is Japanese teriyaki. He's quick to admit his bias, Arreola is president and co-founder of Teriyaki Madness, a casual Asian restaurant with both sit-down and take-out dining.
"My partners and I created all the recipes and all the sauces, which is the secret of good teriyaki," Arreola said. "The sauces are made in-house and that even includes the pot sticker sauces and salad dressings. It's a special taste, somewhat Americanized, and I believe that's why we have become so popular."
Favorite selections are chicken teriyaki, beef teriyaki and spicy chicken. Other entrees include stir-fried vegetables with chicken or beef, chicken teriyaki bowl, beef teriyaki bowl, chicken Yakisoba (stir-fried soft noodles), vegetarian tofu with vegetables, chicken fried rice, spicy beef or chicken bowl and tofu teriyaki. Each entree is served with steamed rice and a choice of green salad or homemade macaroni salad. Among the combinations are chicken and beef, spicy chicken and gyoza (potstickers), chicken teriyaki and spicy chicken and chicken and pork. And yes, egg rolls are offered.
There are four restaurants throughout the valley and three more are scheduled to open in 2007. Teriyaki Madness is open 11 a.m. to 9 p.m. Monday through Saturday. Some locations are open Sunday.
