What a holiday week this is going to be. Hanukkah began on Monday, Christmas is Thursday and Kwanzaa begins Friday. Those celebrating Hanukkah are eating jelly doughnuts and latkes, a fried potato pancake. Christmas is known for gingerbread cookies, fruitcake and the proverbial Christmas goose. And during Kwanzaa, a traditional feast might include fried okra, chicken and sausage gumbo with rice and collard greens, cornbread and sweet potato pie. All these foods are unique to the specifics of each celebration and are served around the dinner table with friends and family. That is why holiday foods are so comforting and memorable. Other comfort foods during Christmas include eggnog, stollen, lutefisk (a traditional Nordic dish made from dried and salted whitefish), rice pudding, Tom and Jerry mixed drink, panettone, Russian tea cake, and who can say no to a beautiful Christmas ham. Several additional Kwanzaa dishes are pulled pork, peanut soup, Mississippi mud pie, Caribbean jerk chicken, deviled eggs, black-eyed peas with ham, and African vegetable stew made with onion, Swiss chard, garbanzo beans, raisins, rice, yams, tomatoes and garlic.
