PICK OF THE WEEK: TRADITIONAL EASTER AND PASSOVER FOODS

This is a truly holy week, where Easter and Passover overlap. It's also a holy time to eat, as some of the best foods of the year can be found during these celebrations. Many of them are included in various hotel buffets. Ham is a traditional Easter food because in the early days, before refrigeration, fresh pork that wasn't consumed during winter was cured for spring. That process took months, so ham was a natural choice for Easter dinner. Hot cross buns, a type of sweet cake, are a popular favorite. Greeks and Portuguese serve round, flat loaves marked with a cross and decorated with Easter eggs, while Syrian and Jordanian Christians have honey pastries. Other items include hard-boiled eggs, pretzels (first shaped to indicate the torso of a person with arms folded in prayer) and roast lamb. That roast lamb dinner goes back even earlier than Easter to the first Passover of the Jewish people. It was eaten with matzo (unleavened bread) and bitter herbs.

The menu is all pizza with toppings such as meatballs, Italian sausage, sun-dried tomatoes, mushrooms, grilled chicken, pesto, kalamata olives, anchovies, fresh garlic, pepperoni, ricotta cheese and ham. The pizzas are personal (12-inch), small (16-inch) or large (18-inch). Calzones come in the same sizes. There are also pesto pizzas and white pizzas with garlic.
