LEARN TO ROLL SUSHI AT HACHI

Hachi inside Red Rock Resort, 11011 W. Charleston Blvd., will offer a hands-on sushi rolling class at 6:30 p.m. on Thursday, April 23 and May 21 for $85 per person, plus tax.

Executive chef Linda Rodriguez, her husband and chef de cuisine Martin Swift and head sushi chef Fernando Luna of Hachi will teach the class.

Rodriguez was the first female chef to have studied under famed chef Nobu Matsuhisa.

The two-hour class will offer each participant their own work area with all ingredients at arm's length.

CARMEL ROOM TO HOST ROBERT STEMMLER WINERY DINNER

The Carmel Room will host a Wine Maker's Dinner featuring Robert Stemmler Winery at 6 p.m. on Thursday. The evening will feature a menu crafted by chef Steven Varga and the winery's pinot noirs. Robert Stemmler Winery was founded in 1976 in Sonoma's Dry Creek Valley in California.

The menu will include courses of Louisiana crayfish and heirloom potato chips, fresh housemade goat cheese salad, crispy skin Mediterranean sea bass, smoked prime shortloin of beef and Meyer lemon and golden raspberry torte for dessert. Each course will feature a wine pairing.

BERTOLINI'S CELEBRATES NATIONAL RAVIOLI DAY

Bertolini's Authentic Trattoria, 9500 W. Sahara Ave., is celebrating National Ravioli Day, Friday, with seven new ravioli dishes, including goat cheese and sun-dried tomato, wild mushroom, shrimp, spinach, beef, vegetali, and lobster.

An additional recipe will be added to the menu on Friday when the restaurant hosts its own version of "Top Chef" by asking local media personalities with strong Italian roots to showcase their family ravioli recipes in a competition. The winner's recipe will be on the menu Friday through Sunday. Bertolini's also will donate half the proceeds from the winning dish's sales to the favorite charity of the winner.

RSVP BY FRIDAY FOR SLOW FOOD DINNER

Slow Food-Las Vegas, the first Nevada convivium of Slow Food USA, and Molto Vegas Restaurants will co-sponsor an eight-course dinner with wine pairings on March 24. Passed hors d' oeuvres will begin at 7 p.m., and the seated dinner begins at 7:30 p.m. The dinner will be held in one of Mario Batali's restaurants in the Venetian or Palazzo, depending on the number of attendees.

The Slow Food movement was founded by Carlo Petrini in Italy in opposition to the explosion of fast food restaurants during the 1980s. One of its aims is to preserve and celebrate local cultural cuisines and foods that are being lost at an alarming rate worldwide.

BECOME A MEMBER OF ROY'S WINE CLUB

Roy's Hawaiian Cuisine of Summerlin hosts a waina hui (wine club) each month to allow members to sample wines from around the world and share in the flavors of the restaurant's cuisine. Tastings are held once a month from 5 to 6:30 p.m. with a sampling of Roy's signature appetizers.

Each tasting is $20 per person for members and $25 for nonmembers. Member benefits include a wine glass, an invitation to all of the club's events, an invitation to Roy's select seasonal events, a 10 percent reduction on bottled wine purchased at the restaurant and reduced pricing for Roy's wine dinners.

EAT OUT FOR A GOOD CAUSE

Café Bleu, the restaurant at Le Cordon Bleu College of Culinary Arts, 1451 Center Crossing Road, is hosting the Ride Around the World Dinner benefiting the Pediatric Brain Tumor Foundation at 5:30 p.m. on April 17. There will be a silent auction and cocktails, with a four-course dinner and wine.

Cost is $95 per person or $90 per person for a table of four or more. Reservations are required and can be made by calling Miriam or Michelle at 795-2000.
