GO GREEN WINE DINNER SET AT FLEMING'S
Fleming's Prime Steakhouse & Wine Bar at 8721 W. Charleston Blvd. is offering a Go Green Wine Dinner in preparation for St. Patrick's Day. The event is planned for 6:30 p.m. Friday.
Earth-friendly wines will be featured. The menu will include passed hors d'oeuvres of Irish cheeses, featuring Sage Derby and Cahill's Farm cheddar, and fresh fruit, paired with Loosen Bros. Riesling Mosel Dr. L Germany 2008, an organic and sustainable wine. The appetizer will be citrus-cured Celtic salmon on potato boxty with chive sour cream, paired with Parducci Sustainable White Mendocino County 2008, an organic, biodynamic and sustainable wine. The entree will be Irish-style filet mignon served on a deconstructed sauce with bacon, carrots, new potatoes and thyme, paired with Chelsea Goldschmidt Merlot Dry Creek Valley 2006, an organic and sustainable wine. Dessert will be Guinness Stout chocolate cake with chantilly cream, served with coffee and tea.

Springs Cafe to host cooking class
Chef Peter Sherlock of the Springs Cafe by Wolfgang Puck at the Springs Preserve is hosting a cooking class from 6 to 8 p.m. March 17 in the Big Springs Theater at 333 S. Valley View Blvd.
The subject of the class will be spring produce.

LEARN TO ROLL SUSHI AT HACHI
Hachi Modern Japanese, inside Red Rock Resort at 11011 W. Charleston Blvd., will offer a sushi rolling class at 6:30 p.m. March 18 for $85 per person, plus tax.
Executive chef Linda Rodriguez, her husband and chef de cuisine, Martin Swift, and head sushi chef Fernando Luna of Hachi will teach the class.
Rodriguez was the first female chef to have studied under famed chef Nobuyuki "Nobu" Matsuhisa.

CULINARY COLLEGE PLANS COOKING CLASS OPEN TO COMMUNITY
Le Cordon Bleu College of Culinary Arts Las Vegas at 1451 Center Crossing Road is offering a cooking class to the community from 9 a.m. to 1 p.m. on select dates.
On March 20, the class will learn about a spring feast.

HASH HOUSE A GO GO RAISES FUNDS FOR EARTHQUAKE VICTIMS
Hash House A Go Go at 6800 W. Sahara Ave. raised $1,580 for Haitian crisis relief during its Restaurants for Relief event Feb 18.
The fundraiser was part of the National Restaurant Association's Share Our Strength and the National Restaurant Association Educational Foundation in Restaurants for Relief -- Haiti. The latter is an initiative to specifically raise funds for the victims of the earthquake in Haiti. Hash House A Go Go donated a percentage of all sales from the day to Haitian crisis relief.
CERES SERVING $20.10 MENU TUESDAY THROUGH SATURDAY
Ceres Restaurant, inside the JW Marriott at 221 N. Rampart Blvd., is returning its special three-course prix fixe menu for 2010.
The Dine in 2010 for $20.10 menu will change weekly and will showcase traditional comfort food items, including choice of appetizer, entree and dessert.

Marché Bacchus at 2620 Regatta Drive is hosting free wine tasting events from 11:30 a.m. to 1:30 p.m. Saturdays.
The informal gatherings allow patrons to learn about the wines they are tasting. Tasting notes will be available for each wine.
Owner Jeff Wyatt, an avid collector of wine for nearly 15 years, will be on hand to discuss the wines with guests in the restaurant.
Marché Bacchus has a wine list that includes more than 950 labels. Wines selected for the Saturday events are often rated 90 points or higher and tend to follow a common theme.

COLLEGE OF SOUTHERN NEVADA LAUNCHES DINE ABOUT CARD
The College of Southern Nevada has launched its first Dine About Card to raise needed funds for students and programs.
The $20 card provides exclusive monthly offers and discounts at a host of local restaurants ranging from fast food to gourmet dining.
The card is good through Dec. 31. Once the card is purchased, customers can visit the Dine About Card page at www.csnfoundation.net to view all specials and print coupons.
The CSN Foundation is selling the card at its three main campuses and nine learning sites throughout Southern Nevada. The card also can be purchased at www.csnfoundation.net. Proceeds will support CSN student scholarships and programs. Call 651-5947.
